Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ¼ cup (25g) unsweetened cocoa powder
  • ¼ cup (25g) black cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (240ml) buttermilk, room temperature
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 tablespoons black gel food coloring
  • 1 teaspoon white vinegar
  • 8 oz (226g) cream cheese, softened
  • ½ cup (113g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Halloween sprinkles (optional)
  • Edible glitter (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, black cocoa powder, baking soda, and salt.
  3. In a large bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth. Add the black gel food coloring and whisk until the color is uniform.
  4. Pour the dry ingredients into the wet mixture. Stir gently with a spatula until just combined. Do not overmix.
  5. Stir in the white vinegar quickly. Pour the batter immediately into the prepared liners, filling each about ⅔ full.
  6. Bake for 18-20 minutes, rotating the pan halfway through. Cupcakes are done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Let the cupcakes sit in the pan for 5 minutes, then transfer them to a cooling rack to cool completely.
  8. While the cupcakes cool, beat the softened cream cheese and butter together in a large bowl until smooth and creamy, about 2 minutes. Gradually add the sifted powdered sugar, one cup at a time, beating on low speed. Add the vanilla and salt, then increase speed to medium-high and beat for 2-3 minutes until light and fluffy.
  9. Transfer the frosting to a piping bag fitted with a star tip. Pipe a spiral onto each cupcake starting from the outside edge. Add Halloween sprinkles or edible glitter immediately before the frosting sets.

Notes

For the deepest black color, use both black cocoa powder and black gel food coloring. Room temperature ingredients emulsify better for a tender crumb. Do not overmix the batter. After frosting, refrigerate cupcakes for 15 minutes to set the frosting. Cupcakes taste even better the day after baking.
